Spicy Fajita Tacos
Ingredients:
- 1 chicken breast
- 2 tortilla wraps
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/2 onion
- 1 lime
- Cheddar cheese
- Soured cream
- Fresh coriander
- 2 tsp Blendship Spicy Fajita Seasoning
Instructions:
- Slice the chicken in half to butterfly the chicken breast, then slice into thin strips. Marinate in 1 teaspoon of Spicy Fajita seasoning and the juice of 1/2 a lime.
- Slice the peppers and the onion into thin strips and then cook in a large frying pan with a little olive oil. Add 1 teaspoon of Spicy Fajita Seasoning. Cook for 5 minutes until the veg has softened.
- Remove the veg from the pan and add the chicken. Cook the chicken for 5 minutes and then add the veg back to the pan and cook for a further 2 minutes.
- Sprinkle some grated cheese onto the mini tortillas, top with the fajita mix and add a little more cheese on top before folding in half.
- Cook in the frying pan for a couple of minutes on both sides until golden and crispy.
- Serve topped with soured cream, fresh coriander and a squeeze of lime juice. Enjoy!
