Spicy Fajita Tacos

Ingredients:

  • 1 chicken breast
  • 2 tortilla wraps
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1/2 onion
  • 1 lime
  • Cheddar cheese
  • Soured cream
  • Fresh coriander
  • 2 tsp Blendship Spicy Fajita Seasoning

Instructions:

  1. Slice the chicken in half to butterfly the chicken breast, then slice into thin strips. Marinate in 1 teaspoon of Spicy Fajita seasoning and the juice of 1/2 a lime.
  2. Slice the peppers and the onion into thin strips and then cook in a large frying pan with a little olive oil. Add 1 teaspoon of Spicy Fajita Seasoning. Cook for 5 minutes until the veg has softened.
  3. Remove the veg from the pan and add the chicken. Cook the chicken for 5 minutes and then add the veg back to the pan and cook for a further 2 minutes.
  4. Sprinkle some grated cheese onto the mini tortillas, top with the fajita mix and add a little more cheese on top before folding in half.
  5. Cook in the frying pan for a couple of minutes on both sides until golden and crispy.
  6. Serve topped with soured cream, fresh coriander and a squeeze of lime juice. Enjoy!
