Roasted Tomato Soup

Ingredients:

  • 1.3kg ripe tomatoes (about 8-10 tomatoes)
  • 1 medium red onion
  • 4 garlic cloves
  • 2tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 500ml vegetable stock
  • 70ml double cream
  • Fresh basil leaves
  • 2 tbsp Blendship All Purpose Seasoning

Instructions:

Preheat your oven to 200°C (400°F).

Halve the tomatoes and quarter the onion. Place the veg and the garlic cloves onto an oven tray.

Drizzle with olive oil and balsamic vinegar, then season with 1 tbsp Blendship All Purpose Seasoning.

Roast in the oven for 35-40 minutes, until the tomatoes are soft and slightly caramelised.

Once roasted, transfer the tomatoes, onion, and garlic to a blender or food processor.

Add half of the stock and blend until smooth. Pour the tomato mixture into a large pot over medium heat.

Add the remaining stock and some more Blendship All Purpose. Bring to a simmer and let it cook for about 10 minutes. Keep simmering until the soup reaches your desired consistency.

Stir in the double cream and add the fresh basil. Taste and adjust seasoning if needed.

Ladle the soup into bowls and garnish with additional fresh basil. Serve with crusty bread or a grilled cheese sandwich. Enjoy!
