Max's One Pan Meatballs

Ingredients:

  • 200g lean beef mince
  • 200g tinned tomatoes
  • 1 tbsp tomato purée
  • 1/4 white onion
  • 1 handful mushrooms
  • 1 garlic clove
  • 1 tsp Maxi’s Lemon Pepper
  • 1 tsp Maxi’s SPG Seasoning
  • 1 tsp Smoked Paprika
  • 1 tbsp Apple Cider Vinegar
  • 30g mozzarella
  • 5g parmesan
  • Fresh basil

Method:

  1. Finely dice the onion, slice the mushrooms and grate the garlic clove. Finely chop the basil stalks. Set aside.
  2. Add the Maxi’s seasonings and smoked paprika into a bowl. Add the beef mince and then mix until combined. Divide into 4-5 meatballs.
  3. In a hot pan, add the meatballs and cook until all sides are browned. Remove from the pan and add sliced mushrooms. Pop a lid on top and cook for 3-5 minutes.
  4. Remove from the pan and add the onion, garlic and basil stalks. Cook for 5-10 minutes stirring occasionally.
  5. Add the tomato paste and cook this off for a couple of minutes. Then add the apple cider vinegar and cook until evaporated. Now add the tinned tomatoes and mix well.
  6. Add the basil, meatballs and mushrooms. Stir them through the sauce, cover with a lid and simmer for 10 minutes.
  7. Add fresh mozzarella and put the lid back on. Cook for 10 minutes. Once everything is cooked and melted it’s time to serve!
  8. Finish with grated parmesan and fresh basil. I served mine with fresh baked sourdough! Enjoy!
