Max's One Pan Meatballs
Ingredients:
- 200g lean beef mince
- 200g tinned tomatoes
- 1 tbsp tomato purée
- 1/4 white onion
- 1 handful mushrooms
- 1 garlic clove
- 1 tsp Maxi’s Lemon Pepper
- 1 tsp Maxi’s SPG Seasoning
- 1 tsp Smoked Paprika
- 1 tbsp Apple Cider Vinegar
- 30g mozzarella
- 5g parmesan
- Fresh basil

Method:
- Finely dice the onion, slice the mushrooms and grate the garlic clove. Finely chop the basil stalks. Set aside.
- Add the Maxi’s seasonings and smoked paprika into a bowl. Add the beef mince and then mix until combined. Divide into 4-5 meatballs.
- In a hot pan, add the meatballs and cook until all sides are browned. Remove from the pan and add sliced mushrooms. Pop a lid on top and cook for 3-5 minutes.
- Remove from the pan and add the onion, garlic and basil stalks. Cook for 5-10 minutes stirring occasionally.
- Add the tomato paste and cook this off for a couple of minutes. Then add the apple cider vinegar and cook until evaporated. Now add the tinned tomatoes and mix well.
- Add the basil, meatballs and mushrooms. Stir them through the sauce, cover with a lid and simmer for 10 minutes.
- Add fresh mozzarella and put the lid back on. Cook for 10 minutes. Once everything is cooked and melted it’s time to serve!
- Finish with grated parmesan and fresh basil. I served mine with fresh baked sourdough! Enjoy!
