Mexican Beef Tacos
Ingredients:
- 500g beef mince
- 2 tbs Blendship Spicy Fajita Seasoning
- 2 tbs tomato paste
- 6 mini tortillas
- 1 lime
Toppings:
- 1 avocado, diced
- 1 red onion, finely chopped
- 1 tomato, diced
- Fresh coriander, chopped
- Grated cheese
- Soured cream
Instructions:
- Heat a large pan over medium heat. Add the beef mince, breaking it up with a spatula, until browned (about 5-7 minutes).
- Stir in the Blendship Spicy Fajita Seasoning and tomato paste, mixing well to coat the beef. Let it cook for another 2-3 minutes, allowing the flavours to blend. Add a splash of water to prevent it from drying out.
- While the beef is cooking, warm the mini tortillas in the microwave for a few seconds until soft and pliable.
- Divide the seasoned beef among the tortillas. Add the small chunks of avocado, chopped red onion, diced tomato, and fresh coriander as toppings.
- Top each taco with a dollop of soured cream, grated cheese and a squeeze of lime juice. Enjoy your delicious Mexican Beef Tacos!
