Max's BBQ Beef Brisket
Ingredients:
- 2kg beef brisket, flat cut
- 2 tbsp brown sugar
- 3 tbsp Maxi’s All Purpose
- 2 tbsp Maxi’s SPG
- 1 tbsp Maxi’s Lemon Pepper
- 1 tbsp Onion powder
- 1 tsp cayenne pepper
- 1 tbsp dried thyme
- 120ml beef stock
- 120ml apple cider vinegar
- 2 onions
- 4 garlic cloves
- Mustard
- 5 tbsp BBQ Sauce
- 1 tsp Liquid Smoke
Instructions:
- In a bowl, combine the sugar and all the dry seasonings. Mix well.
- Pat the beef brisket dry and trim off any large chunks of fat. Rub the beef in mustard and then coat in the dry rub.
- Roughly chop the onions and layer them in a large roasting tray with the garlic. Place the brisket on top and pour the beef stock and apple cider vinegar around the sides.
- Cover tightly with tin foil and roast in the oven at 130 degrees celcius for 4.5 hours.
- Mix the BBQ sauce and liquid smoke together. Remove brisket from the oven and baste with sauce. Place back in the oven for another 1.5 hours.
- Remove from the oven and Leave to rest for 45 mins. Slice and serve!
