Hidden Veg Tomato Cooking Sauce
This hidden veg sauce makes a great base for soups, casseroles, chilli con carne, bolognese, lasagne, curries and much more!
Ingredients:
300g tomatoes
2 tbsp tomato paste
1 carrot
1 red onion
1 beetroot
1 red bell pepper
2 garlic cloves
50ml 100% apple juice
50ml water
1 tsp honey
2 tsp Balsamic Vinegar
3 tsp Blendship All Purpose Seasoning
1 tsp Blendship Lemon Pepper Seasoning
Method:
1. Firsly roughly chop all of the veg into small pieces.
2. Add to a large pan with a little olive oil and cook away on a medium heat for 10 mins. Stir every couple of minutes.
3. Add the tomato paste and balsamic vinegar, then cook for a further 5 minutes.
4. Add the apple juice and water, then cook for a further 5 minutes.
5. Transfer into a blender, or use a stick blender, and blend until totally smooth. Your hidden sauce is now ready to use!
Store in the fridge in an airtight container for up to 3-5 days.
