Hidden Veg Gravy

Ingredients:

  • 1 large carrot
  • 1 onion
  • 1 celery stalks
  • 1/2 courgette
  • 4-5 mushrooms
  • 1 potato
  • 1-2 tsp of mixed herbs
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 500ml beef stock
  • 1 tbsp butter
  • 1 tsp Blendship SPG
  • 1 tsp Blendship All Purpose

 

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the diced carrot, onion, celery, courgette, mushrooms, and potato. Sauté until the vegetables are softened and starting to caramelise, about 10-15 minutes.
  2. Add the mixed herbs, Blendship SPG, and Blendship All Purpose Seasoning. Cook for another minute to let the flavours develop.
  3. Stir in the tomato paste and Worcestershire sauce. Cook for another 2 minutes, allowing the tomato paste to darken slightly for a richer flavour.
  4. Pour in the beef stock and bring the mixture to a simmer. Reduce the heat and let it cook for 15-20  minutes, until the vegetables are very tender.
  5. Once the vegetables are soft, use an immersion blender (or transfer to a blender) to blend the gravy until it’s smooth and velvety.
  6. Taste and adjust the seasoning if needed. You can add more Worcestershire sauce, salt, pepper, or herbs as desired. Or even a dash of honey to help sweetened slightly.
  7. Optional Straining: For an ultra-smooth gravy, you can strain it through a fine mesh sieve after blending.
  8. Serve: Your hidden veg gravy is ready to serve! It’s perfect over roast meats, mashed potatoes, or even vegetables.
