Hidden Veg Gravy
Ingredients:
- 1 large carrot
- 1 onion
- 1 celery stalks
- 1/2 courgette
- 4-5 mushrooms
- 1 potato
- 1-2 tsp of mixed herbs
- 1 tbsp Worcestershire sauce
- 1 tbsp tomato paste
- 500ml beef stock
- 1 tbsp butter
- 1 tsp Blendship SPG
- 1 tsp Blendship All Purpose
Instructions:
- In a large pot, melt the butter over medium heat. Add the diced carrot, onion, celery, courgette, mushrooms, and potato. Sauté until the vegetables are softened and starting to caramelise, about 10-15 minutes.
- Add the mixed herbs, Blendship SPG, and Blendship All Purpose Seasoning. Cook for another minute to let the flavours develop.
- Stir in the tomato paste and Worcestershire sauce. Cook for another 2 minutes, allowing the tomato paste to darken slightly for a richer flavour.
- Pour in the beef stock and bring the mixture to a simmer. Reduce the heat and let it cook for 15-20 minutes, until the vegetables are very tender.
- Once the vegetables are soft, use an immersion blender (or transfer to a blender) to blend the gravy until it’s smooth and velvety.
- Taste and adjust the seasoning if needed. You can add more Worcestershire sauce, salt, pepper, or herbs as desired. Or even a dash of honey to help sweetened slightly.
- Optional Straining: For an ultra-smooth gravy, you can strain it through a fine mesh sieve after blending.
- Serve: Your hidden veg gravy is ready to serve! It’s perfect over roast meats, mashed potatoes, or even vegetables.
