Chilli Con Carne Loaded Sweet Potato Fries

Ingredients:
- 200g lean beef mince
- 200g tinned tomatoes
- 200ml water
- 200g Maris piper potatoes
- Small handful spinach
- Mushroom
- 25g cheddar cheese
- 1/2 onion
- 1/2 carrot
- 2 garlic cloves
- 1 tsp tomato paste
- 1/2 tsp cumin
- 1/2 tsp chilli flakes
- 1/2 tsp smoked paprika
- 1/2 tsp ground coriander
- Salt
- Black pepper
- 1 tsp coconut oil

Method:
- First grate the carrot and dice the onion. Cook in a large pan for 5-10 mins over a medium heat with a little coconut oil and some salt.
- Then add the mushrooms and cook for 5 minutes. Now remove everything from the pan and set aside.
- Whack in the beef mince, break it up, and cook until browned all over. Then add the veg back in. Add the seasoning, cook for 1 min, then add tomato paste and cook for 2 mins.
- Pour in tinned tomatoes, fill the tin with water and add that too. Mix well and then leave to simmer for 30 minutes over a low heat.
- Chop your sweet potato into fries, wash thoroughly, then boil for 5 mins. Drain them, then let them steam dry.
- Add a little coconut oil and Maxi’s SPG. Air fry for 20 mins at 200 degrees celcius.
- Add spinach into the chilli con carne, along with chopped fresh coriander. Mix and leave to simmer.
- Everything should be ready now so it’s time to serve up! Top with some grated cheese and enjoy! Lovely.
