Chicken Gyros
Ingredients:
- 4 chicken breasts
- 3 tbsp Blendship Kebab Seasoning
- 3 tbsp olive oil
- 1 lemon
- 4 flatbreads
For the Homemade Chips:
- 2 large maris piper potatoes
- 2 tbsp olive oil
- 1 tbsp Blendship Spud Seasoning
For the Tzatziki Sauce:
- 1/4 cucumber
- 8 tbsp Greek yogurt
- 2 garlic cloves
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Blendship SPG
- 1 tsp Blendship Lemon Pepper
Optional Toppings:
- Sliced red onion
- Sliced tomatoes
This recipe makes 4-5 servings.
Instructions:
- Preheat the oven to 200°C (400°F). Slice the potatoes into planks, about 1cm thick. Then cut the planks into fries/chips. Wash in cold water to rinse off the starch. Place into a saucepan of boiling water and boil for 5 minutes. Drain and then let them steam dry for a few minutes.
- Coat the chips in olive oil and cook in the oven for 30 minutes, or until golden and crispy, turning them halfway.
- Whilst the chips cook, slice the chicken into very thin straps and place them into a large bowl. Combine them with some olive oil, lemon juice, and Blendship Kebab Seasoning. Mix well, cover, and let it marinate for at least 10 minutes (or you can do this overnight for more flavour).
- Heat a large pan over medium-high heat. Cook the marinated chicken for about 5-7 minutes per side, until browned and cooked through. Set aside (you can keep the chicken warm in the oven whilst making the tzatziki).
- Grate the cucumber and the give it a good squeeze to remove any excess liquid. In a bowl, combine the grated cucumber, Greek yogurt, garlic, olive oil, lemon juice, Blendship SPG and Blendship Lemon Pepper. Mix well and refrigerate until ready to use.
- To assemble the Gyros, warm the flatbreads in the oven for a couple of minutes. Add a generous serving of cooked chicken, a spoonful of tzatziki sauce, a handful of homemade chips, and any toppings like red onion or tomatoes. Crumbling some feta cheese on top also makes a great addition! Fold up the flatbread and enjoy this delicious version of gyros!
