Chicken and Veg Stir Fry
Ingredients:
(Serves 2)
- 2 chicken breasts
- 1 tbsp olive oil (or any cooking oil)
- 1 red bell pepper
- 1 orange bell pepper
- 1 medium carrot
- 1 small onion
- Handful of broccoli florets
- 3 cloves garlic
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp honey (optional, for sweetness)
- 1 tsp Blendship SPG seasoning
- 2 tsp Blendship All Purpose seasoning
- 50ml water (to steam the vegetables slightly)
- Egg noodles
Instructions:
- Heat the oil in a large frying pan over medium-high heat. Slice the chicken into thin strips and cook in the pan for 4-5 minutes until browned and cooked through. Add the SPG seasoning and 1 teaspoon of All Purpose seasoning. Cook for another 30 seconds and then remove from the pan.
- Slice all of the vegetables into thin strips, for the broccoli you can just break this apart into small pieces. Add all of the veg to the pan and cook for a few minutes. Add the water and allow the steam to help cook the veg for a couple of minutes, stirring occasionally.
- Add the chicken back to the pan, along with the garlic, soy sauce and honey. Cook for 1 minute. Add the noodles and 1 tsp of Blendship All Purpose seasoning, mix well, and cook for a further couple of minutes. Serve up and enjoy!
