Cheesy Bacon and Veg Baked Egg Muffins

Ingredients:
  • 3 eggs
  • 1 spring onion
  • 1/4 courgette
  • Bell pepper
  • 25g low fat cheddar cheese 
Method:
  1. Preheat the oven to 180 degrees celcius.
  2. Crack the eggs into a large bowl and whisk with a fork.
  3. Finely slice the vegetables and add this into the bowl, along with the cheese.
  4. Mix well and then pour the mixture into your muffin cases - this should make 3-4 muffins.
  5. Bake in the oven for 10 minutes or until the top is golden and the egg is cooked all the way through.
