Cheesy Bacon and Veg Baked Egg Muffins

Ingredients:
- 3 eggs
- 1 spring onion
- 1/4 courgette
- Bell pepper
- 25g low fat cheddar cheese
Method:

Preheat the oven to 180 degrees celcius.

Crack the eggs into a large bowl and whisk with a fork.

Finely slice the vegetables and add this into the bowl, along with the cheese.

Mix well and then pour the mixture into your muffin cases - this should make 3-4 muffins.

Bake in the oven for 10 minutes or until the top is golden and the egg is cooked all the way through.
