Cauliflower Cheese with Crispy Bacon and Parsley
Ingredients:
- 1 whole cauliflower
- 3 smoked bacon rashers
- 4 tbsp butter
- 4 tbsp plain flour
- 750ml milk
- 150g grated cheddar cheese
- 50g grated Parmesan cheese
- 1 tsp mustard
- 1 tsp Worcestershire sauce
- Blendship All Purpose Seasoning
- Blendship Salt, Pepper, Garlic
- Fresh parsley
Instructions:
- Remove the leaves from the cauliflower (you can save them for a veg stock). Then separate the florets from the stem with knife and cut any large pieces into half so they’re all about the same size.
- Place the cauliflower florets into a large oven dish, drizzle with oil and season with Blendship Salt, Pepper, Garlic. Roast at 200 degrees Celsius for 20 minutes.
- Slice the bacon into small strips and then add to a large sauce pan. Cook the bacon until crispy and then remove from the pan and set aside.
- Melt the butter in the pan the bacon cooked in and then add the flour. Stir continuously over a low heat and cook out the flour for a few minutes.
- Gradually add the milk whilst whisking continuously to remove any clumps of flour. Once added all the milk and you have a thick smooth sauce, add 3/4 of the cheddar and Parmesan. Stir until melted.
- Season with Blendship SPG and All Purpose. Add the Worcestershire sauce and mustard and mix until combined.
- Remove the cauliflower from the oven, pour over the cheese sauce and top with cheddar and Parmesan. Place it back into the oven until golden and bubbling.
- Remove from the oven, top with crispy bacon and parsley and enjoy!
